
I have a really nice neighbor across the street who was kind enough to share this roll recipe with me (after she brought us a pan of "sticky buns" last year). She said it freezes well also! Even though she gave it to me last year, I just made it for the first time this last week!
I have tried different recipes that are a lot more complicated (such as the one where I had to scald milk and then let it cool before I used it). This recipe is a lot simpler and tastes better (in my opinion)! This is the recipe I'll be using for rolls from now on!
ICE BOX ROLLS
2 cups warm water
1 package yeast (I used 1Tbsp.)
4 T. Shortening (I used real butter)
1/2 C. sugar
2 eggs
1 tsp. salt
3+ C. flour
Bake at 350 degrees for 30 minutes*.
*Directions didn't come with this recipe. So I am just going to tell you what I did:
Dissolve yeast in water with a pinch of sugar. Let sit until you see the yeast starting to grow (or whatever it is that it does:). Next, add the melted butter (or shortening), sugar, salt, and eggs. Mix well. Add 3 cups of flour, mix well. Continue to add flour (around 4 cups) and mix until the dough is not sticky. Let rise. I let mine rise at least one hour (I think the longer the better).
Roll out for cinnamon rolls or shape into your desired roll shape.
*I am pretty sure my cinnamon rolls didn't bake for 30 minutes! So, make sure you check them after 15 minutes or so (or when they start smelling really good), and then every couple minutes thereafter to make sure they don't burn!
I also mixed melted butter, milk, vanilla, and powdered sugar for the frosting (add cream cheese if you really want to make it good!). I don't even know exactly how much of each thing I put in! (Martha Stewart I am not!) But I can let you know an estimate if you want. Just let me know!
